In traditional chocolate production, several steps are outsourced: farmers harvest cocoa, intermediaries transport and process it, and manufacturers produce chocolate at scale. Bean-to-bar makers handle every stage themselves. This includes:

Cracking, winnowing, grinding, refining, and conching
